Lentils are a staple you must add to your pantry, if you haven't already. Lentils are a part of the legume family. They are versatile, hearty, inexpensive, and not to mention nutritious. Lentils are a great source of fiber, potassium, and folic acid. It makes a great alternative for meat dishes like tacos! Also checkout some other ways I used this recipe throughout the week. Cook time 30 minutes
6 servings
1 serving is 3 corn tortillas
Ingredients
1/2 medium onions diced
1/2 Green bell pepper, diced
1 lb red lentils
1 medium potato diced
4 cups water
3 Tbsp oil
Corn Tortillas
Seasonings
1 tsp Chili powder
1/2 tsp Cumin
1/4 tsp Black pepper
1/2 tsp Garlic Powder
1/4 tsp Black Pepper
1/2 tsp Paprika
1/2 tsp Cayenne pepper
Garlic salt to taste
Optional (Ginger powder + Tumeric + salsa + hot sauce )
Directions:
In a large skillet on medium heat add oil of choice , once warm add onions and green peppers. Sautée for a few minutes.
Add all seasonings, stir and water and Bring heat to high.
Add in lentils and potatoes and boil for 20 minutes or until lentils are full cooked.
Add water as needed so lentils do not dry out and season more to taste.
Bring heat to a simmer and Lightly mash lentils for a few minutes.
Cover skillet and allow dish to simmer for 10 minutes.
Serve in corn tortillas and add topping of choice.
