Ingredients
16 oz. Kale, chopped
1 tbsp. Olive oil
1 tbsp. Lime
1 tbsp cilantro
1 cup Watermelon, diced
1 15.5 oz can of black beans, rinsed
2 corn on the cobs,
Crumbled Feta Cheese to top
*If you have red onion add about 1/4 cup!
Direction:
Rinse and chop the kale. Place in a large bowl and pat dry. Once kale is fully dry add olive oil and massage into kale until soft. Add lime juice. (optional add salt and pepper to taste).
Add in all other ingredients and mix.
optional dress it up with salad dressing of choice.
