Watermelon Summer Salad


Do you need some food ideas on what to bring to the next summer gathering? This watermelon summer salad will bring color, nutrition, and taste to the menu. It is packed with flavor, fiber, and fun for all. When you think of summer Watermelon comes to mind. Watermelon makes an excellent snack, juice, or frozen icicle as it is low calorie, high in vitamin c, naturally sweet, and filled with hydration as it is 92% of water! Add this recipe to your recipe card box to bring some versatility and uniqueness to the table...literally!



Ingredients

16 oz. Kale, chopped

1 tbsp. Olive oil

1 tbsp. Lime

1 tbsp cilantro

1 cup Watermelon, diced

1 15.5 oz can of black beans, rinsed

2 corn on the cobs,

Crumbled Feta Cheese to top

*If you have red onion add about 1/4 cup!

Direction:

  1. Rinse and chop the kale. Place in a large bowl and pat dry. Once kale is fully dry add olive oil and massage into kale until soft. Add lime juice. (optional add salt and pepper to taste).

  2. Add in all other ingredients and mix.

  3. optional dress it up with salad dressing of choice.
